Ingredients
2 cups full-fat cottage cheese
2 tsp vanilla extract
2 cups almond flour
2 scoops vanilla protein powder
½ cup keto brown sugar (Swerve)
1 cup keto-friendly chocolate chips
Instructions
1. Blend cottage cheese and vanilla until smooth.
2. Transfer to a bowl and mix in almond flour, protein powder, and sweetener.
3. Fold in chocolate chips.
4. Scoop dough onto parchment-lined baking sheet.
5. Bake at 350°F for 13–15 minutes.
6. Cool before serving.
Notes
Chill dough before baking for crunchier cookies.
Use small-curd, full-fat cottage cheese for best results.
