Ingredients
1 ½ cups almond flour
3 tbsp melted butter
2 tbsp monk fruit sweetener (granular)
16 oz full-fat cream cheese
⅓ cup powdered erythritol
¼ cup key lime juice (fresh or bottled)
1 tsp lime zest
½ cup heavy whipping cream
Optional: 1 tbsp unflavored gelatin
Instructions
1. Mix almond flour, butter, and sweetener. Press into pan.
2. Chill crust while preparing filling.
3. Beat cream cheese until smooth. Add erythritol, lime juice, and zest.
4. Whip in heavy cream until fluffy.
5. Pour filling into crust. Smooth top.
6. Chill for at least 4 hours or overnight.
7. Top with whipped cream, lime slices, or coconut flakes.
Notes
Use brick-style cream cheese for best consistency.
Add lime extract for more flavor.
Store in fridge up to 5 days or freeze slices for up to 1 month.
