Preparation
- Combine the dry ingredients: Add the flour and baking powder to a medium bowl. Stir to blend. Add a pinch of salt if using.
- Add the cottage cheese: Make a well in the flour. Spoon the cottage cheese into the center.
- Mix until chunky: Use a fork or rubber spatula to fold the cottage cheese into the flour until it forms a rough, chunky mass.
- Knead briefly: Turn the dough onto a floured surface and knead by hand for 1–2 minutes until semi-smooth.
Shaping
- Divide the dough into 4 equal pieces and roll each into a 6–7 inch log about 3/4-inch thick to form bagel shapes.
- Prepare the egg wash by cracking and whisking the egg with a splash of water or milk. Lightly brush each bagel.
Cooking
- Preheat the air fryer to 300°F (150°C). Spray or line the basket with parchment suitable for air fryers.
- Air fry bagels in a single layer for 15–17 minutes until golden, checking at 10 minutes.
- Cool bagels for at least 15 minutes before slicing and serving.

Store cooled bagels in an airtight container in the refrigerator for up to 3 days. For longer storage, wrap individually and freeze for up to 3 months. Refresh in an air fryer at 350°F for best texture.
