Ingredients

  • 1.5 cups all-purpose flour Sifted
  • 0.5 cup brown sugar Packed
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 2 large eggs Room temperature
  • 0.5 cup granulated sugar
  • 0.5 cup butter Melted
  • 1 teaspoon vanilla extract
Filling
  • 2 cups chopped apples Peeled and chopped, about 2 apples (Pink Lady, Gala, Honeycrisp)

Method
 

Preparation
  1. Preheat your oven to 350°F. Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper, and set it aside.
  2. In a small bowl, whisk together the brown sugar and cinnamon. Set this fragrant mixture aside.
Mixing Ingredients
  1. In a large mixing bowl, whisk together the eggs and granulated sugar until well combined.
  2. Stir in the melted butter and vanilla extract until the mixture is smooth and cohesive.
  3. Add all-purpose flour, baking powder, baking soda, and salt. Mix until just combined; the batter will be thick.
  4. Gently fold in the chopped apples, ensuring they're well distributed.
Baking
  1. Pour half of the batter into the prepared loaf pan. Sprinkle three-quarters of the brown sugar mixture over this layer.
  2. Carefully spread the remaining batter on top, sprinkle the rest of the cinnamon sugar over it, and create a marbled effect using a knife.
  3. Bake for 35 to 45 minutes, until golden and a toothpick comes out clean or with a few moist crumbs.
  4. If browning too quickly, tent with foil for the last 10 to 15 minutes.
  5. Let the apple bread cool completely before slicing and serving.
