Ingredients
  

  • 2 cups fresh apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 2–3 tbsp milk
  • 1 tsp lemon juice (optional)

Method
 

  1. Peel and dice fresh apples into bite-sized pieces.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and nutmeg.
  3. In another bowl, beat eggs, sugar, brown sugar, oil, and vanilla until smooth.
  4. Gently fold the dry mixture into the wet, then stir in the diced apples.
  5. Pour batter into a greased 9x13 pan or bundt pan. Bake at 350°F (175°C) for 35–40 minutes until golden and a toothpick comes out clean.
  6. Allow cake to cool completely before frosting.
  7. Beat cream cheese and butter until fluffy. Add powdered sugar and milk, beat until creamy. Mix in lemon juice if using.
  8. Spread frosting generously over the cooled cake before serving.
