  • 1 cup all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ cup sugar
  • 1 tsp ground cinnamon
  • ½ cup milk
  • 1 large egg
  • 2 medium apples, diced (Honeycrisp or Granny Smith)
  • neutral oil for frying (like canola)
  • ½ cup powdered sugar
  • 2 tbsp milk or cream (for glaze)

Method
 

  1. In a mixing bowl, whisk together the flour, baking powder, sugar, and cinnamon. Add the milk and egg, mixing until smooth.
  2. Dice apples into small chunks and gently fold them into the batter.
  3. Heat oil in a deep pot to 350°F (test with wooden spoon or thermometer).
  4. Drop spoonfuls of batter into the hot oil. Fry until golden brown, flipping once for even cooking (about 2–3 minutes per side).
  5. Remove and drain on a paper towel-lined plate.
  6. Whisk powdered sugar and milk to form a glaze. Drizzle over warm fritter bites and serve.

Notes
