Ingredients
  

  • 1/4 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1 pinch nutmeg (optional)
  • 3 tbsp milk
  • 1 tbsp butter or oil, melted
  • 1/2 tsp vanilla extract
  • 1/4 cup apple, diced (Granny Smith or Honeycrisp)

Method
 

  1. In a large (10 oz or bigger) microwave-safe mug, whisk together the flour, sugar, baking powder, cinnamon, and nutmeg until well combined.
  2. Add milk, melted butter or oil, and vanilla extract. Stir until the mixture is smooth.
  3. Fold in the diced apples, making sure they are evenly distributed in the batter.
  4. Microwave on high for 60 to 90 seconds. Start with 60 seconds, and continue in 10-second intervals until the top is fluffy and springs back.
  5. Let cool slightly before serving. Top with ice cream, caramel, or extra cinnamon if desired.
