- In a large (10 oz or bigger) microwave-safe mug, whisk together the flour, sugar, baking powder, cinnamon, and nutmeg until well combined.
- Add milk, melted butter or oil, and vanilla extract. Stir until the mixture is smooth.
- Fold in the diced apples, making sure they are evenly distributed in the batter.
- Microwave on high for 60 to 90 seconds. Start with 60 seconds, and continue in 10-second intervals until the top is fluffy and springs back.
- Let cool slightly before serving. Top with ice cream, caramel, or extra cinnamon if desired.
