Ingredients
  

  • 3 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 2 large carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup sliced cucumbers
  • 1 cup shelled edamame (optional)
  • 3 green onions, chopped
  • 0.5 cup fresh cilantro, chopped
  • 2 tbsp toasted sesame seeds
  • 3 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 2 tbsp fresh ginger, grated
  • 1 garlic clove, minced
  • 1 lime, juiced

Method
 

  1. Shred green and red cabbage, julienne carrots, and slice bell pepper and cucumbers. Place all in a large mixing bowl.
  2. Add shelled edamame (if using), chopped green onions, and fresh cilantro to the bowl of vegetables.
  3. In a separate bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, olive oil, honey, ginger, garlic, and lime juice until smooth.
  4. Pour the dressing over the salad and toss thoroughly until everything is evenly coated.
  5. Sprinkle toasted sesame seeds over the top and chill the salad for 10–15 minutes before serving.
