- Shred green and red cabbage, julienne carrots, and slice bell pepper and cucumbers. Place all in a large mixing bowl.
- Add shelled edamame (if using), chopped green onions, and fresh cilantro to the bowl of vegetables.
- In a separate bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, olive oil, honey, ginger, garlic, and lime juice until smooth.
- Pour the dressing over the salad and toss thoroughly until everything is evenly coated.
- Sprinkle toasted sesame seeds over the top and chill the salad for 10–15 minutes before serving.
