Ingredients

  • 1 package (14 oz) Little Smokies sausages
  • 1 lb thin-cut bacon
  • 1 cup brown sugar (light or dark)
  • 20-30 toothpicks
  • 1 pinch optional cayenne pepper or smoked paprika

Equipment

  • baking tray
  • parchment paper or foil
  • kitchen scissors or knife to cut bacon
  • paper towels for drying sausages
  • toothpicks for securing wraps

Method

  1. Preheat oven to 375°F (190°C). Line a baking tray with parchment or foil. Cut each bacon slice into three strips. Pat sausages dry with paper towels.
  2. Wrap each sausage tightly with a piece of bacon and secure with a toothpick. Place seam-side down on baking sheet.
  3. Sprinkle brown sugar generously over the wrapped Smokies. Optionally mix sugar with cayenne or paprika first for extra flavor.
  4. Bake for 25–30 minutes until bacon is golden and crisp. For extra crispiness, bake a few minutes longer.
  5. Let rest for 5 minutes to set the glaze. Serve warm and enjoy.

Notes

Try variations like spicy cayenne or a BBQ glaze. Bake on a wire rack for extra crispness. You can make them ahead and refrigerate before baking. Serve warm or keep in a slow cooker on 'low' to maintain texture at parties.
