- Grease two 9x5 loaf pans or line them with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, cream together the softened butter and sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the sour cream and vanilla extract until just combined.
- Gradually add the dry ingredients to the wet, mixing just until combined. Do not overmix.
- Fold in mashed bananas and optional nuts or chocolate chips.
- Divide the batter evenly between the two loaf pans.
- Bake in a preheated oven at 350°F (175°C) for 55–65 minutes, or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Notes
Swap sour cream with full-fat Greek yogurt if needed. Try chocolate chips instead of nuts for a sweet twist, or sprinkle sugar on top before baking for a bakery-style crust. This recipe also makes excellent muffins (bake 20–25 minutes at 350°F).
