Banana Nut Bread with Sour Cream

This moist and rich banana nut bread is made with sour cream for extra tenderness and flavor. With overripe bananas, crunchy nuts, and a buttery crumb, it's the ultimate cozy bake — perfect for breakfast, snack time, or dessert.

Ingredients
  

  • 3 cups all-purpose flour (sifted for lighter texture)
  • 2 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter, softened (2 sticks)
  • 2 cups granulated sugar (can reduce to 1 ½ cups)
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup sour cream (or full-fat Greek yogurt)
  • 1.5 cups mashed ripe bananas (about 3–4 bananas)
  • 1 cup pecans or walnuts (optional)
  • 1 cup chocolate chips (optional)

Method
 

  1. Grease two 9x5 loaf pans or line them with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream and vanilla extract until just combined.
  6. Gradually add the dry ingredients to the wet, mixing just until combined. Do not overmix.
  7. Fold in mashed bananas and optional nuts or chocolate chips.
  8. Divide the batter evenly between the two loaf pans.
  9. Bake in a preheated oven at 350°F (175°C) for 55–65 minutes, or until a toothpick comes out clean.
  10. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Notes

Swap sour cream with full-fat Greek yogurt if needed. Try chocolate chips instead of nuts for a sweet twist, or sprinkle sugar on top before baking for a bakery-style crust. This recipe also makes excellent muffins (bake 20–25 minutes at 350°F).
