Ingredients
  

  • 3 ripe bananas, mashed
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup chocolate chips or chopped nuts (optional)

Method
 

  1. Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Add melted coconut oil, honey, eggs, and vanilla to the bananas. Mix well.
  4. In a separate bowl, combine oats, baking powder, cinnamon, and salt.
  5. Combine the wet and dry mixtures. Stir gently until fully blended. Fold in optional mix-ins if using.
  6. Spread the batter into the prepared baking pan and smooth the top.
  7. Bake for 25 to 30 minutes or until golden and a toothpick comes out clean.
  8. Cool completely in the pan before slicing into bars.
