Ingredients
  

  • 1 lb chicken breasts, boneless skinless, cut into 1-inch cubes
  • 1 tbsp olive oil
  • to taste salt and black pepper
  • 1/2 cup mayonnaise (light mayo optional)
  • 1/4 cup sweet chili sauce
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 4 cups cooked rice (white, brown, or jasmine)
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • sesame seeds (optional garnish)

Method
 

  1. Season chicken with salt and black pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 5 to 7 minutes until golden and cooked through.
  2. Whisk mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar in a small bowl until smooth.
  3. Toss cooked chicken in the sauce until well coated.
  4. Place rice into serving bowls and top with saucy chicken, lettuce, carrots, and green onions.
  5. Sprinkle sesame seeds on top and serve immediately.
