Ingredients
  

Main ingredients
  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
Bang Bang sauce
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • ½ unit Juice of lime Juice of half a lime
Serving ingredients
  • 2 cups cooked jasmine rice (or cauliflower rice) For a low-carb option, use cauliflower rice
  • 1 cup shredded purple cabbage
  • 1 unit avocado (sliced)
  • ½ cup shredded carrots
  • 2 unit green onions (sliced)
  • unit Fresh cilantro and sesame seeds for garnish

Method
 

Preparation
  1. Preheat your oven or air fryer to 400°F (200°C).
  2. In a bowl, combine the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in this seasoning mix until evenly coated.
  3. Place the panko breadcrumbs in a shallow dish. Dip each salmon cube into the breadcrumbs, pressing gently to adhere.
Cooking
  1. Arrange the coated salmon bites on a baking sheet (or in the air fryer) and lightly drizzle with olive oil or spray with cooking spray. Bake for about 12-15 minutes, or air-fry for about 8-10 minutes, until crispy and golden.
Making Bang Bang Sauce
  1. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice.
Serving
  1. Serve salmon bites on a bed of jasmine rice or cauliflower rice, topped with shredded cabbage, sliced avocado, carrots, and green onions. Drizzle with the Bang Bang sauce and garnish with fresh cilantro and sesame seeds.

Notes

For extra crunch, press the panko breadcrumbs firmly into the salmon. Experiment with adding minced ginger or lime zest to the sauce for extra flavor. Reheat leftovers in an oven or air fryer at a low temperature to retain crispiness.
