This Berry French Toast Casserole is the perfect make-ahead breakfast for holidays or cozy weekends. It's rich, custardy, and bursting with juicy berries, all baked into golden, crispy-topped perfection.

Ingredients
  

  • 1 loaf brioche or challah bread, cubed
  • 8 eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/3 cup brown sugar
  • 2 tbsp maple syrup
  • 1 cup fresh or frozen strawberries, sliced
  • 1 cup fresh or frozen blueberries
  • 2 tbsp butter, for greasing and topping
  • optional streusel topping

Method
 

  1. Cut brioche or challah into cubes. Place half in a greased 9x13 inch baking dish.
  2. Spread half of the strawberries and blueberries over the bread.
  3. In a large bowl, whisk together eggs, milk, cream, vanilla, cinnamon, brown sugar, and maple syrup.
  4. Pour half of the custard mixture evenly over the bread and berries.
  5. Add the remaining bread and pour the rest of the custard over it. Press gently to coat all pieces.
  6. Cover and refrigerate overnight, or at least 2 hours.
  7. Preheat oven to 350°F (175°C). Bake uncovered for 40–45 minutes until golden and puffed. Add streusel before baking if using.
  8. Let rest 10 minutes before serving. Top with powdered sugar, fresh berries, and maple syrup.
