Preparation
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
- In a mixing bowl, combine oats, flour, brown sugar, and melted butter, stirring until the mixture becomes crumbly.
- Press half of the crust mixture into the bottom of the prepared baking dish.
- In a separate bowl, beat together the softened cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
- Pour the cream cheese mixture over the crust evenly.
- In another bowl, toss the blueberries with lemon juice and layer them on top of the cream cheese filling.
- Crumble the remaining oat mixture over the blueberries.
Baking
- Bake in the preheated oven for about 25-30 minutes until the bars are set and lightly golden on top.
- Allow them to cool before slicing into bars.
