For the Dough
  • 4 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup whole milk Warm to correct temperature
  • 1/2 cup unsalted butter Melted
  • 3 large eggs
  • 1 cup dark chocolate chips High-quality recommended
  • 1/4 cup candied orange peel Optional
For the Glaze
  • 1 egg beaten with 1 tablespoon of water For glazing the buns

Method
 

Preparation
  1. Combine the flour, sugar, salt, yeast, cinnamon, and nutmeg in a large bowl.
  2. In a small saucepan, gently heat the milk until warm and stir in the melted butter along with the eggs.
  3. Pour the milk mixture into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about ten minutes until it's smooth and elastic.
  5. Mix in the chocolate chips and candied orange peel if using.
  6. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm area for about one hour or until it has doubled in size.
Baking
  1. Preheat your oven to 375°F (190°C).
  2. After the first rise, punch down the dough and divide it into 12 equal pieces, shaping each into a bun.
  3. Arrange them on a baking sheet lined with parchment paper.
  4. Allow them to rise for another 30 minutes before brushing the tops with the egg wash.
  5. Bake for 20-25 minutes or until they are golden brown.
  6. Let them cool slightly before serving.
