Ingredients
  

  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 8 slices cooked bacon, crumbled
  • 0.25 cup red onion, finely chopped
  • 0.33 cup raisins or dried cranberries
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup sunflower seeds or chopped almonds (optional)
  • 0.5 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or sugar
  • salt and pepper to taste

Method
 

  1. Blanch broccoli in boiling water for 1 minute, then immediately transfer to an ice bath to retain color and crunch.
  2. Fry the bacon until crispy. Let cool and crumble into small pieces.
  3. In a medium bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper to create the dressing.
  4. In a large bowl, combine the broccoli, bacon, red onion, raisins, cheddar cheese, and seeds (if using).
  5. Pour the dressing over the mixture and toss well until evenly coated.
  6. Refrigerate for 30 minutes before serving to let flavors meld. Garnish with extra seeds or cheese if desired.

Notes

For extra crunch, add almonds or sunflower seeds just before serving. Roast the broccoli for deeper flavor or swap mayo with Greek yogurt for a lighter version. Keep bacon separate until serving if making ahead.
