- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or nonstick spray.
- Steam or blanch the broccoli for 3–4 minutes until bright green and slightly tender. Drain well to avoid excess moisture.
- In a large bowl, whisk together cream of mushroom soup, sour cream, eggs, diced onion, garlic powder, salt, and pepper until smooth.
- Add 1½ cups of cheddar cheese and the broccoli to the mixture. Gently fold until well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Mix crushed crackers or breadcrumbs with melted butter and sprinkle evenly on top.
- Bake uncovered for 30–35 minutes until bubbly and golden brown.
- Let rest for 5 minutes before serving. This helps set the layers and makes it easier to serve.
