Ingredients

  • 4 cups fresh broccoli florets, lightly steamed
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (10 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 eggs
  • 0.5 cup onion, diced
  • 1 tsp garlic powder
  • salt and pepper, to taste
  • 1 cup crushed crackers or breadcrumbs
  • 2 tbsp butter, melted

Equipment

  • 9x13-inch baking dish
  • mixing bowls
  • steamer or pot
  • whisk
  • spoon or spatula

Method

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or nonstick spray.
  2. Steam or blanch the broccoli for 3–4 minutes until bright green and slightly tender. Drain well to avoid excess moisture.
  3. In a large bowl, whisk together cream of mushroom soup, sour cream, eggs, diced onion, garlic powder, salt, and pepper until smooth.
  4. Add 1½ cups of cheddar cheese and the broccoli to the mixture. Gently fold until well combined.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Mix crushed crackers or breadcrumbs with melted butter and sprinkle evenly on top.
  7. Bake uncovered for 30–35 minutes until bubbly and golden brown.
  8. Let rest for 5 minutes before serving. This helps set the layers and makes it easier to serve.

Notes

Add shredded chicken or brown rice to make it a full meal. For a crispy topping, broil for 1-2 minutes at the end. Use smoked cheddar for a richer flavor. Prep ahead and refrigerate unbaked casserole for up to 24 hours. Swap sour cream with Greek yogurt for a healthier twist.
