Pasta and Vegetables
  • 8 oz pasta (e.g., rotini or bowtie) Cooked according to package instructions, rinsed under cold water.
  • 2 cups broccoli florets Fresh is preferred.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup grated Parmesan cheese Can substitute with feta cheese for a different flavor.
Dressing
  • 1/4 cup olive oil Can substitute with avocado oil for a different taste.
  • 2 tablespoons lemon juice
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Prepare the pasta according to the instructions on the package. Once cooked, drain and rinse it with cold water.
  2. In a sizeable mixing bowl, combine the cooled pasta with the broccoli florets, halved cherry tomatoes, diced red onion, and grated Parmesan cheese.
Dressing
  1. In a smaller bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Assembly
  1. Drizzle the dressing over the pasta salad and toss gently to mix all ingredients thoroughly.
  2. Allow the salad to chill in the refrigerator for a minimum of 30 minutes before serving.
