Ingredients
  

  • 1 cup unsalted butter, divided
  • 1 1/2 cups granulated sugar, divided
  • 1/4 cup light brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder (natural or Dutch process)
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

Method
 

  1. In a light-colored pan, brown the butter over medium heat until golden and fragrant. Divide evenly into two bowls and let cool slightly.
  2. Make the brownie batter: To one portion of browned butter, add 1 cup sugar, 2 eggs, and 1 tsp vanilla. Whisk to combine. Sift in 1 cup flour, cocoa powder, baking powder, and salt. Fold in half of the chocolate chips. Spread into a parchment-lined 8x8 inch pan.
  3. Make the cookie dough: Beat second portion of browned butter with 1/2 cup sugar and brown sugar until fluffy. Add 1 egg and 1 tsp vanilla. Mix in remaining flour, baking soda, and salt. Stir in remaining chocolate chips.
  4. Drop spoonfuls of cookie dough over the brownie batter and gently spread to cover.
  5. Bake at 350°F (175°C) for 30–35 minutes, until cookie top is golden and toothpick comes out with moist crumbs.
  6. Let brookies cool completely in the pan. For neat slices, chill before cutting into bars.
