Ingredients
  

Main Ingredients
  • 1 cup unsalted butter (browned) Unsalted is recommended to control salt; use salted if necessary.
  • 2 cups brown sugar (light or dark) Can substitute with 1 3/4 cups packed + 1/4 cup white sugar.
  • 2 large eggs (room temperature) Room temperature is ideal for emulsifying the batter.
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt Reduce added salt if using salted butter.
  • 1 cup M&M's or chocolate chips Chocolate chips can be substituted.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line a 9x13-inch pan with parchment, leaving an overhang to lift the blondies out later. Grease the parchment lightly.
  2. Melt the butter in a light-colored saucepan over medium heat, stirring or swirling frequently until the butter turns golden brown and has a nutty aroma.
  3. Transfer the browned butter to a heatproof bowl and cool for 5–10 minutes.
  4. Whisk the browned butter and brown sugar together until smooth and slightly glossy.
  5. Add eggs one at a time, whisking each until incorporated. Stir in the vanilla.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Fold the dry ingredients into the wet mixture in two additions, mixing until just combined—do not overwork.
  8. Fold in M&M's or chocolate chips.
  9. Spread the batter evenly in the prepared pan, smoothing the top with a spatula.
Baking
  1. Bake for 25–30 minutes, until the edges are set and golden. A toothpick inserted near the center should come out with a few moist crumbs, not wet batter.
  2. Cool completely in the pan on a rack before lifting out and slicing into bars.

Notes
