  • 1 can (15 oz) diced tomatoes, drained (or 2-3 Roma tomatoes)
  • 1/2 cup fresh basil, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze (or 1 tsp balsamic vinegar)
  • 1/4 tsp salt (adjust to taste)
  • 1/8 tsp black pepper, freshly ground
  • 8 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese (optional)
  • toasted baguette slices or crackers, for serving

Method
 

  1. Mix the topping by combining tomatoes, basil, garlic, olive oil, balsamic glaze, salt, and pepper in a bowl. Let it rest for at least 15 minutes to develop flavor.
  2. Spread softened cream cheese evenly in a shallow serving dish. Sprinkle mozzarella cheese on top if desired.
  3. Spoon the tomato mixture over the cream cheese layer evenly.
