Ingredients
  

For the Chicken
  • 1 lbs Chicken breast Can substitute with chicken thighs or shrimp.
  • 2 tbsp Cajun seasoning Homemade blend of paprika, garlic, and cayenne can be used.
  • 1 tbsp Olive oil Helps in coating the chicken.
For the Pasta
  • 8 oz Penne or fettuccine pasta Whole wheat or gluten-free options can be used.
For the Sauce
  • 1 cup Heavy cream Can substitute with half-and-half for a lighter option.
  • 1 cup Marinara sauce Fire-roasted tomato sauce can also be used.
  • 1 tbsp Butter Used for searing the chicken.
  • 2 cloves Garlic Add garlic powder in a pinch.
  • 1 cup Bell peppers Adds color and sweetness; zucchini or mushrooms can be substituted.
  • 1 medium Onion For added flavor.
  • 1/2 cup Parmesan cheese Can use Pecorino or mozzarella as alternatives.

Method
 

Preparation
  1. Slice chicken breasts into thin strips. Coat them with Cajun seasoning, salt, and a drizzle of olive oil. Let it sit for 10 minutes.
Cooking
  1. Heat a large skillet over medium-high heat with butter and olive oil. Add the chicken and cook for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  2. In the same skillet, add sliced onions and bell peppers. Sauté until soft and lightly caramelized, about 3–4 minutes. Add garlic and cook for 30 seconds.
  3. Pour in the Marinara sauce and stir to combine. Add the heavy cream and bring to a gentle simmer. Season with extra Cajun seasoning.
  4. Add the cooked pasta directly into the skillet. Toss until well coated with sauce. Stir in the seared chicken and simmer together for 2–3 minutes.
  5. Sprinkle Parmesan cheese on top, garnish with parsley, and serve hot.

Notes
