  • 8 oz pasta (penne or rotini)
  • 1 lb Cajun sausage (sliced)
  • 1 bell pepper (chopped)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream Can be substituted with Greek yogurt for a lighter option.
  • 1 cup shredded cheese (cheddar or pepper jack) Use your preferred type for different flavors.
  • 2 tsp Cajun seasoning Adjust according to spice preference.
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • to taste Fresh parsley (for garnish)

Method
 

Cooking Instructions
  1. Cook the pasta according to the package instructions until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced Cajun sausage, chopped bell pepper, onion, and minced garlic. Cook until the sausage is browned and the veggies are tender.
  3. Stir in the heavy cream and Cajun seasoning and bring to a gentle simmer.
  4. Add the cooked pasta and cheese to the skillet, stirring until the cheese has melted and everything is well combined.
  5. Season with salt and pepper to taste, mix well, and remove from heat.
  6. Garnish with fresh parsley before serving hot.
