Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg until well combined.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Incorporate the egg and vanilla extract, blending thoroughly.
  5. Gradually mix in the dry ingredients until combined, then fold in grated carrots, nuts, and raisins if using.
Cream Cheese Filling
  1. In a separate bowl, beat the softened cream cheese and powdered sugar until smooth.
Baking
  1. Take a tablespoon of cookie dough and place it on the baking sheet.
  2. Add a small dollop of cream cheese filling on top, then seal it with another tablespoon of dough.
  3. Bake for 10-12 minutes until edges turn golden brown.
