Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with cupcake liners.
  2. In a mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger; whisk until well mixed.
  3. In a large bowl, mix the granulated sugar, brown sugar, and eggs until thoroughly combined.
  4. Pour in the vegetable oil and blend until smooth.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Fold in the grated carrots, drained crushed pineapple, nuts, and raisins if using.
Baking
  1. Distribute the batter into the prepared cupcake liners equally.
  2. Bake for 18-20 minutes, checking for doneness with a toothpick inserted in the center.
  3. Once baked, allow them to cool completely before frosting them.
Frosting
