  • 1/2 cup brown sugar Adds moisture and flavor depth.
  • 1/2 cup vegetable oil Can be replaced with applesauce for lower fat content.
  • 2 large eggs Use room temperature for better emulsification.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon Adds warmth and flavor.
For the Lemon Frosting
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 1 tablespoon lemon zest
  • 1 tablespoon softened butter Can be substituted with a non-dairy option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, combine the grated carrots, zucchini, sugars, vegetable oil, eggs, and vanilla extract until fully blended.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually mix the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  5. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Frosting Preparation
  1. While the bars are baking, prepare the lemon frosting by mixing the powdered sugar, lemon juice, lemon zest, and softened butter until smooth.
  2. Once the bars have cooled, spread the lemon frosting evenly on top before cutting them into squares.
