Main Ingredients
  • 1 lb ground chicken Can substitute with ground turkey or plant-based proteins.
  • 1 bell pepper, diced Use any color bell pepper.
  • 1 onion, diced Yellow or white onion works best.
  • 2 cups cooked rice Any variety of cooked rice can be used.
  • 1 cup shredded cheese Use your favorite cheese, like cheddar or pepper jack.
  • 4 large tortillas Flour or corn tortillas can be used.
  • Salt and pepper to taste
  • Oil for toasting Vegetable oil or any oil of your choice.

  1. In a skillet over medium heat, cook the ground chicken until browned.
  2. Add the diced bell pepper and onion, cooking until soft.
  3. Stir in the cooked rice and season with salt and pepper.
  4. Lay each tortilla flat and add a portion of the chicken mixture and shredded cheese.
  5. Roll up the tortillas tightly to form burritos.
  6. In the same skillet, heat oil and place the burritos seam-side down; toast until golden and crispy on all sides.
  7. Serve warm.
