  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lb chicken breasts, cubed
  • to taste salt and pepper
  • 16 oz pasta (penne, rotini, or fusilli)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (garnish)

Method
 

  1. Cook pasta according to package directions until al dente, then drain.
  2. Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
  3. Add cubed chicken, season with salt and pepper, and cook for 5 to 7 minutes until browned and fully cooked.
  4. Pour in chicken broth, heavy cream, and milk. Bring to a gentle simmer.
  5. Stir in pasta, cheddar, mozzarella, and Parmesan until the sauce turns creamy.
  6. Garnish with parsley and serve hot.
