Ingredients
  

Vegetables and seasoning
  • 2 cups mixed vegetables (zucchini, bell peppers, carrots, broccoli, etc.) Feel free to substitute with your favorite veggies.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
Creamy cheese sauce
  • 1 cup shredded cheese (cheddar, mozzarella, or blend) Choose your favorite cheese.
  • 1/2 cup heavy cream For extra creaminess.
Garnish
  • to taste fresh herbs (parsley or basil) For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, toss mixed vegetables with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Spread seasoned vegetables evenly on a baking sheet in a single layer.
Cooking
  1. Roast the vegetables in the oven for 20-25 minutes, or until tender and slightly caramelized.
  2. While the vegetables roast, combine heavy cream and shredded cheese in a separate bowl until mixed well.
  3. Once vegetables are done, remove them from the oven and pour the cheese mixture over them. Stir gently to combine.
  4. Return the dish to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
  5. Garnish with fresh herbs just before serving.

Notes
