  • 1.5 lbs diced potatoes (Yukon Gold or red)
  • 13 oz sliced smoked sausage (Kielbasa or similar)
  • 1 packet ranch seasoning mix (1 oz)
  • 1/2 cup milk (any kind, dairy-free ok)
  • 1 cup shredded cheddar cheese (freshly shredded preferred)
  • 2 tbsp olive oil (or vegetable/avocado oil)
  • to taste salt and pepper
  • fresh chives or green onions for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl toss diced potatoes with olive oil, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 20 to 25 minutes until tender.
  4. While roasting, whisk together ranch seasoning mix and milk.
  5. Add sliced smoked sausage to the pan with roasted potatoes.
  6. Pour ranch mixture over the potatoes and sausage and toss gently.
  7. Sprinkle shredded cheese evenly on top.
  8. Return to the oven for 10 to 15 minutes until cheese is melted and bubbly.
  9. Garnish with fresh chives or green onions before serving.
