Cheesy Ranch Potatoes and Smoked Sausage Easy Casserole

Ingredients
  

  • 2 lbs potatoes, peeled and diced (Russet or Yukon Gold recommended)
  • 1 tbsp olive oil (or butter for richer flavor)
  • 1 lb smoked sausage, sliced (turkey or chicken sausage optional)
  • 1 packet (1 oz) ranch seasoning mix (or homemade)
  • 1 cup cheddar cheese, shredded (Colby Jack or Pepper Jack for variation)
  • 1/2 cup milk (or cream for richness)
  • 1/4 cup fresh parsley, chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil and ranch seasoning until well coated.
  3. Spread the potatoes on a baking sheet in a single layer and bake for 20 minutes.
  4. Add sliced smoked sausage to the potatoes, stir, and bake another 15–20 minutes until tender.
  5. Mix shredded cheddar with milk and pour over the sausage and potatoes.
  6. Bake for 5–7 more minutes until the cheese is melted and bubbling.
  7. Garnish with chopped parsley and serve hot.

Notes
