Ingredients
  

For the mascarpone mixture
  • 2 cups mascarpone cheese Use high-quality mascarpone for the best flavor.
  • 2 tablespoons sugar
  • 1 cup heavy cream Whip until stiff peaks form.
For layering
  • 1 cup brewed coffee, cooled
  • 3/4 cup amaretto liqueur Can be swapped for non-alcoholic extract or flavored coffee liqueur.
  • 1 package ladyfinger cookies
  • 1 cup fresh cherries, pitted and halved Use fresh cherries for the best flavor.
  • Cocoa powder for dusting
  • Chocolate shavings for garnish

Method
 

Preparation
  1. Beat the mascarpone cheese and sugar together in a mixing bowl until smooth.
  2. In a separate bowl, whip the heavy cream until it forms stiff peaks. Gently fold this into the mascarpone mixture.
  3. In a shallow dish, whisk together the cooled coffee and amaretto.
  4. Carefully dip each ladyfinger into the coffee mixture for 1-2 seconds, then layer them in the bottom of your serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the halved cherries.
  6. Repeat the layering process with the remaining ladyfingers, mascarpone mixture, and cherries.
  7. Cover the dish and refrigerate for at least 4 hours or, for best results, overnight.
  8. Before serving, dust the top with cocoa powder and sprinkle with chocolate shavings.

Notes
