- Beat the mascarpone cheese and sugar together in a mixing bowl until smooth.
- In a separate bowl, whip the heavy cream until it forms stiff peaks. Gently fold this into the mascarpone mixture.
- In a shallow dish, whisk together the cooled coffee and amaretto.
- Carefully dip each ladyfinger into the coffee mixture for 1-2 seconds, then layer them in the bottom of your serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, followed by half of the halved cherries.
- Repeat the layering process with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover the dish and refrigerate for at least 4 hours or, for best results, overnight.
- Before serving, dust the top with cocoa powder and sprinkle with chocolate shavings.
