  • 3-4 pieces boneless, skinless chicken breasts
  • 8 ounces Lo Mein noodles (fresh or dried) Cook according to package instructions.
  • 1 piece red bell pepper, sliced
  • 1 piece yellow bell pepper, sliced
  • 2 pieces carrots, thinly sliced
  • 2 pieces green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Preparation
  1. Begin by gathering all your ingredients. Chop the vegetables into bite-sized pieces for easy cooking.
  2. Cook the Lo Mein noodles according to the package instructions, usually for about 4-5 minutes, until al dente. Drain and set them aside.
Cooking
  1. Heat a large skillet or wok over medium-high heat and warm the sesame oil.
  2. Add the chicken breasts and sauté them until they turn golden brown and are fully cooked, approximately 6-8 minutes. Remove the chicken from the skillet and set it aside.
  3. In the same pan, stir-fry the bell peppers, carrots, and green onions until tender-crisp, about 3-4 minutes.
  4. Return the cooked chicken to the skillet. Add the cooked noodles, soy sauce, sesame oil, minced garlic, and any additional spices you prefer.
  5. Toss everything together until well mixed and heated through, which should take about 2 minutes.
  6. Serve hot, and don’t forget to set out some extra soy sauce on the side for those who like a little bit more flavor.

Notes
