Method
 

Preparation
  1. In a large bowl, mix ground chicken, mayonnaise, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper. Be careful not to overwork the meat.
  2. Divide the mixture into four loose balls.
Cooking
  1. Heat a large skillet over medium-high heat and add the oil until shimmering.
  2. Place the chicken balls in the skillet with room to spare. Press each ball down to approximately ½ inch thickness.
  3. Cook for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes. Add cheese in the last minute if desired.
  4. Optionally, toast the hamburger buns until golden.
Assembly
  1. Assemble your burgers with fresh toppings like lettuce, tomato, and pickles.
