- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, cooking until soft and fragrant.
- Add chicken breasts to the pot. Sprinkle with taco seasoning and stir to coat evenly.
- Pour in chicken broth and diced tomatoes. Stir well, bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until chicken is cooked through.
- Remove the chicken, shred it using two forks, and return it to the pot.
- Add beans and corn if using. For creamy keto version, add cream cheese and stir until melted.
- Simmer for 5 more minutes. Serve hot with your choice of toppings.
