Ingredients
  

  • 1 15-ounce can chickpeas, rinsed and drained
  • 2 ripe peaches, diced
  • 0.5 medium red onion, thinly sliced
  • 0.25 cup fresh cilantro or mint, chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tbsp honey (or maple syrup/agave for vegan)
  • 0.5 tsp salt, to taste
  • 0.25 tsp freshly ground black pepper
  • feta or goat cheese, optional

Method
 

  1. Place rinsed chickpeas, diced peaches, onion, and herbs in a large mixing bowl.
  2. In a smaller bowl, whisk olive oil, lime juice, honey, salt, and pepper until smooth.
  3. Pour the dressing over the chickpea mixture and toss gently.
  4. Taste and adjust with more lime or honey as needed.
  5. Chill for 30 minutes for flavors to blend or serve immediately.
  6. Add feta or goat cheese just before serving if desired.
