Ingredients
  

Dry Ingredients
  • 1 cup pecans Can be replaced with almonds or walnuts.
  • 1 cup oatmeal
  • 12-15 pieces dates (about 1 ½ – 2 cups)
  • 2 tablespoons cocoa powder Can be replaced with matcha powder for a different variation.
Wet Ingredients
  • ½ cup peanut butter Substitute with almond butter for nut-free option.
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips

Method
 

Preparation
  1. In a food processor, combine the pecans, oatmeal, and dates. Blend or pulse until the mixture resembles small pieces.
  2. Add peanut butter, cocoa powder, vanilla, and mini chocolate chips to the date mixture. Pulse or blend until well combined.
  3. Remove the food processor blade and transfer the mixture to a mixing bowl. Use a cookie scoop to portion and roll the mixture into about 2-inch balls.
  4. Roll the balls gently in your hands for a smooth finish.
  5. Place the energy balls in the refrigerator to firm up and reduce stickiness. They’ll last for about a week in the fridge.
