Preparation
  1. Process the pitted Medjool dates in your food processor until they reach a sticky paste consistency.
  2. Add the cocoa powder, nuts (if using), vanilla extract, and a pinch of salt. Blend until well combined and smooth.
  3. With clean hands, form small balls from the mixture. Roll them in coconut flakes or crushed nuts if desired.
  4. Arrange the truffles on a plate and refrigerate for at least 30 minutes to firm up.
