Preparation
- Process the pitted Medjool dates in your food processor until they reach a sticky paste consistency.
- Add the cocoa powder, nuts (if using), vanilla extract, and a pinch of salt. Blend until well combined and smooth.
- With clean hands, form small balls from the mixture. Roll them in coconut flakes or crushed nuts if desired.
- Arrange the truffles on a plate and refrigerate for at least 30 minutes to firm up.
