- In a large bowl, combine the chopped strawberries, Greek yogurt, honey, and vanilla extract. Mix thoroughly until everything is well incorporated.
- Scoop out about 2 tablespoons of the yogurt mixture and shape it into clusters on a parchment-lined baking sheet or large plate. You should be able to form around 10 clusters.
- Place the tray in the freezer and allow the clusters to freeze completely, about 1 to 2 hours.
Chocolate Coating
- Meanwhile, melt the chocolate. In a microwave-safe bowl, combine the chocolate chips and coconut oil, then heat in 15 to 30-second intervals, stirring until fully melted.
- Remove the yogurt clusters from the freezer. Carefully dip each cluster into the melted chocolate using a spoon to ensure they are thoroughly coated.
- Return the chocolate-coated clusters to the parchment-lined sheet. For an added touch, sprinkle a little sea salt on top.
- Pop the baking sheet back in the freezer for a few minutes to set the chocolate. Enjoy your delicious creations!
