Christmas Cranberry Roll Ups

Ingredients
  

  • 1 package (8 oz) cream cheese, softened
  • 0.5 cup cranberries, chopped (fresh, frozen, or dried)
  • 0.25 cup green onions, chopped
  • 0.25 cup pecans, chopped
  • 1 tbsp honey
  • 0.5 tsp orange zest
  • 1 pinch salt
  • 1 pinch black pepper
  • 4 large flour tortillas

Method
 

  1. In a medium bowl, combine cream cheese, chopped cranberries, green onions, pecans, honey, orange zest, salt, and pepper. Stir until smooth and evenly mixed.
  2. Lay out the tortillas and spread the cream cheese mixture evenly, leaving about ½ inch around the edges.
  3. Starting from one edge, roll each tortilla tightly into a log.
  4. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to firm up.
  5. Unwrap, slice into 1-inch pinwheels, and arrange on a platter. Serve chilled.

Notes

For extra color, use red or green spinach tortillas. Be sure to chill at least 1 hour before slicing to get clean, firm pinwheels. You can make these the night before your event for convenience.
