- In a large bowl, combine warm milk and sugar, then sprinkle yeast on top. Let sit 10 minutes until frothy. Add melted butter, eggs, and salt. Mix in flour gradually until soft dough forms. Knead on floured surface for 8–10 minutes until smooth. Let rise 1–2 hours until doubled.
- Mix brown sugar, cinnamon, and nutmeg in a bowl. Roll dough into 12x24 inch rectangle. Brush with melted butter and sprinkle with cinnamon sugar mix evenly.
- Roll the dough tightly into a log. Cut into 18 slices. Arrange rolls on a parchment-lined baking sheet in tree shape (1-2-3-4-5 with 1–2 extras for trunk). Cover and let rise 45–60 minutes.
- Preheat oven to 350°F (175°C). Bake 20–25 minutes until golden. Cover loosely with foil if browning too quickly.
- Mix powdered sugar, milk or cream, and vanilla to form icing. Add food coloring if using. Drizzle over slightly cooled rolls. Decorate with sprinkles or dust with powdered sugar if desired.
