  • 1 head romaine lettuce, chopped 4-5 cups
  • 1 cup sliced cherry tomatoes
  • 1/2 cup chopped cucumber
  • 1/2 cup shredded carrots can also use chopped or matchstick carrots
  • 1/3 cup diced or sliced red onion
  • 1 cup croutons use gluten-free croutons if needed
  • grated parmesan cheese optional for topping
Vinaigrette Ingredients
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Method
 

Preparation of Vinaigrette
  1. Gather all the vinaigrette ingredients in a mason jar with a lid and shake vigorously until fully emulsified. Alternatively, combine the ingredients in a bowl and whisk until blended.
Salad Assembly
  1. In a large mixing bowl, layer the chopped veggies: romaine, tomatoes, cucumber, carrots, onion, and croutons.
  2. Pour your homemade dressing over the salad, tossing everything gently to ensure an even coating.
  3. Finish off with optional grated parmesan cheese for an added touch.
