Pasta and Vegetables
  • 12 oz tri-color rotini pasta Cook according to package instructions
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed Can substitute with other cheeses
  • 1/4 cup red onion, diced
Dressing
  • 1/2 cup homemade vinaigrette Storebought vinaigrette can also be used
  • Salt and pepper to taste

Method
 

Preparation
  1. Boil the tri-color rotini pasta following the package instructions until al dente. Drain the pasta and allow it to cool completely.
  2. In a large mixing bowl, blend the cooled pasta with cherry tomatoes, diced cucumber, bell pepper, sliced black olives, cubed mozzarella cheese, and diced red onion.
  3. Drizzle the homemade vinaigrette over the ingredients and gently toss to combine everything well.
  4. Season with salt and pepper according to your taste preferences.
  5. Place in the refrigerator for at least 30 minutes before serving to allow the flavors to meld perfectly.
