Filling Ingredients
  • 10 oz frozen chopped spinach, thawed and well-drained Squeeze out as much liquid as possible.
  • 4 oz cream cheese, softened Use full-fat for the best texture.
  • ½ cup mayonnaise Can substitute with Greek yogurt.
  • ½ cup sour cream Can substitute with Greek yogurt.
  • ¼ cup Knorr Vegetable Recipe Mix Alternatively use 1½ tsp vegetable bouillon powder plus garlic and onion powders.
  • ½ cup bacon pieces, cooked and crisped Turkey bacon can be used for a leaner option.
  • 4 oz water chestnuts, chopped Can substitute with finely chopped celery.
  • 4 oz spinach flour tortillas Plain flour tortillas are also fine.

Method
 

Preparation
  1. Chop the water chestnuts into small, even pieces.
  2. In a large bowl, combine the drained spinach, cream cheese, mayonnaise, sour cream, and Knorr Vegetable Recipe Mix. Mix until smooth.
  3. Fold in the chopped water chestnuts and bacon pieces until evenly incorporated.
  4. Spread a quarter of the spinach mixture evenly over each tortilla, leaving a small margin at the edge, and roll tightly.
  5. Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 1 hour.
Serving
  1. Unwrap the plastic wrap and slice off the ends for neat edges; cut each roll into 6 pieces.
  2. Arrange on a platter and serve.
