  • 4 pieces bell peppers (any color) A mix of colors makes it beautiful.
  • 1 lb ground beef (or turkey for a lighter option)
  • 1 cup cooked rice White or brown rice both work.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella) Cheddar or mozzarella melts perfectly.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Carefully slice the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are translucent.
  4. Mix in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper until well combined.
  5. Fill each bell pepper with the beef and rice mixture, standing them upright in a baking dish.
  6. Cover with foil and bake for 25 minutes.
  7. Remove the foil, sprinkle cheese on top, and bake for an additional 10–15 minutes until the cheese is bubbly and golden.
  8. Serve warm and enjoy!
