Cracked Garlic Steak Tortellini in Creamhouse Sauce Bliss

Ingredients
  

Main Ingredients
  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye) Alternatively, you can swap for chicken or grilled vegetables.
Seasonings
  • 1 tsp salt
  • 1 tsp black pepper Cracked black pepper is optional as a garnish.
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
For the Sauce
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated Freshly grated is best for flavor.
Optional Garnishes
  • Parsley, chopped For garnish.
  • Red pepper flakes Optional for a hint of spice.

Method
 

Cooking the Tortellini
  1. Begin by boiling salted water in a large pot. Cook the cheese tortellini according to package directions, roughly 3-5 minutes. Drain, but be sure to reserve a cup of that pasta water!
Searing the Steak
  1. Season your steak with salt, black pepper, garlic powder, and smoked paprika. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for a perfect medium-rare. Once done, remove it from the pan and let it rest.
Making the Cream Sauce
  1. In the same skillet, add the butter and let it melt. Toss in the minced garlic and cook for around 30 seconds until fragrant. Pour in the heavy cream and whole milk, stirring all the while until it becomes smooth and bubbly.
Combining Everything
  1. Gradually whisk in the parmesan cheese until it’s melted and the sauce is glossy. If you find your sauce is a bit too thick, don’t hesitate to add some of that reserved pasta water. Toss in the cooked tortellini and slice the rested steak to place on top.
Finishing Touches
  1. Garnish with chopped parsley and red pepper flakes if you desire a hint of spice. Serve immediately while it’s gloriously warm!

Notes

For best results, ensure your steak is at room temperature before cooking. If your sauce gets too thick, add reserved pasta water gradually until desired consistency is achieved. Experiment with flavors by adding sautéed mushrooms or spinach, or by using different seasonings.
