Ingredients
  

  • 15-20 mini sweet peppers, halved and seeded
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 2 tbsp chopped green onions
  • salt and pepper, to taste
  • 1 tbsp olive oil (for brushing)

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each mini pepper lengthwise and remove the seeds.
  3. In a bowl, mix cream cheese, shredded cheddar, garlic powder, green onions, salt, and pepper.
  4. Fill each pepper half with the cheese mixture and smooth the top.
  5. Brush the tops with olive oil to promote browning.
  6. Bake for 15 to 20 minutes until the peppers are tender and the tops are slightly golden.
