- Bring a large pot of salted water to a boil. Cook your pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the cooking water.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and cook until fragrant and translucent.
- Add ground beef to the skillet. Break it apart with a spatula and cook until browned. Season with salt, black pepper, and paprika.
- Lower the heat and pour in heavy cream. Stir in Parmesan cheese and mix until it melts into a silky sauce. If the sauce is too thick, add a splash of pasta water for perfect consistency.
- Add the cooked pasta to the pan, toss until fully coated, and sprinkle with chopped parsley. Taste and adjust seasoning if needed. Serve immediately while hot and creamy.
