Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (such as rotini or penne) Feel free to use whole wheat pasta for a healthier twist.
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved Can be substituted with a dairy-free alternative.
  • 1/2 cup fresh basil leaves, chopped
Creamy Dressing
  • 1/2 cup mayonnaise Adjust for creaminess preference.
  • 1/4 cup Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook the pasta according to the package instructions. When it's al dente, drain and let it cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella, and chopped basil.
  3. In a separate bowl, whisk together the mayonnaise, Greek yogurt, olive oil, balsamic vinegar, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss gently to combine all ingredients.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld beautifully.

Notes
